Ingredients

  • 4 bone-in or boneless pork chops
  • 1 can of cream of mushroom soup (or cream of chicken/onion)
  • ½ cup of milk or heavy cream
  • 1 medium onion, sliced
  • 3 medium potatoes, thinly sliced (or 2 cups cooked rice)
  • 1 cup shredded cheddar cheese (optional)
  • Salt, pepper, garlic powder to taste
  • Optional: French onion soup mix
  • Optional: Sautéed mushrooms or bell peppers
  • Optional: Fresh herbs (thyme, parsley, or rosemary)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Season pork chops with salt, pepper, and garlic powder. Sear in a hot skillet for 2–3 minutes on each side.
  3. Layer sliced potatoes or cooked rice on the bottom of the dish. Add sliced onions evenly over the top.
  4. Place the seared pork chops over the onions.
  5. In a bowl, mix cream of mushroom soup with milk or cream. Pour over the pork chops and spread evenly.
  6. Top with shredded cheddar cheese, if using.
  7. Cover with foil and bake for 45–55 minutes. Uncover and bake an additional 10 minutes to brown the top.
  8. Garnish with fresh parsley or thyme and let rest for 5 minutes before serving.
